Colorful Nutritious Vegan Bowl

I was wondering what to make for dinner and I decided to make a colorful bowl of vegetables, grains and protein with whatever I have in my refrigerator.  

If you are on a healthy and a low carb diet, this bowl will put a smile on your face. Its super easy, delicious and is definitely worth a try. It’s a great way to get a variety of nutrients in your diet.

What do we have in this “Guilt free” and “Colorful Bowl
”? let’s see!

  • Air Fryer Beetroot Cutlets 
  • Tossed Green Salad 🥒🍅🧅🥒🍅 
  • Sliced Avocados 🥑 
  • Buttery Garlic Green Beans 

Ingredients for Beetroot Cutlets: 

  • 2 beets 
  • medium carrot 
  • few pieces of cabbage 
  • 1 sweet orange pepper 
  • 1 sweet yellow pepper 
  • 4 florets broccoli 
  • 3 pods of garlic 
  • 1 jalapeño 
  • a few springs of cilantro 
  • slice of brown bread 
  • 1/2 cup Buckwheat Flour 
  • 2 tbsp Corn flour 
  • few peanuts 
  • 1 tbsp cumin powder 
  • 1 tsp Paprika 
  • 2 tbsp lemon juice 
  • salt and pepper to taste

Ingredients for Tossed Green Salad:

  • 1/2 cup cucumbers sliced 
  • 1/2 cup red onions peeled and sliced 
  • 1/2 cup tomatoes diced 
  • 1/4 cup Red Radish sliced.  
  • 1 tbsp olive oil,  
  • 1 tbsp lemon juice 
  • 1 tbsp chopped parsley  
  • 1 tbsp Dill chopped 
  • salt and pepper to taste.


Ingredients for Buttery Garlic French Green Beans

  • 250g long fresh beans 
  • 1tbsp garlic finely chopped 
  • 2 tbsp Peanuts or walnuts 
  • 1 tbsp everything bagel seasoning 
  • Salt and pepper to taste 


Beetroot Cutlets

  1. Gather all the above ingredients in a food processor and pulse it well.  
  2. Remove it in a bowl and make it into cutlets (patties).  
  3. Spray few drops of olive oil and Pan fry or Air Fry them till golden on both sides.  
  4. Keep it aside.

Tossed Green Salad

  1. Toss up the salad with all the above ingredients and herbs.  
  2. Chill it for 1/2 an hour.  

    Buttery Garlic French Green Beans

    1. Heat water in a pan and when it starts boiling, add long beans and 1/2 tsp salt.  
    2. Cook until the beans are soft.  
    3. Drain water.  
    4. Heat butter in a pan, Sauté garlic until golden.  
    5. Add the green beans and salt and stir till it’s mixed well.   
    6. Everything bagel seasoning 
    7. Add peanuts or walnuts. 
    8.  Keep it aside. 

    Sliced Avocadoes 

    1. Peel and slice the avocadoes and arrange it in a platter. 

      Serving Suggestions

      1. Arrange all the above dishes in a nice bowl. 
      2. Serve with a Creamy avocado cilantro lime dressing   
      3. Enjoy this “Scrumptious and Nutritious Meal” 😋😋
